Erin’s mum Lara is a big fan of hearty food with a little twist. Fajitas are her absolute favourite. They’re quick and easy to make. Why not give them a whirl?
Ingredients
- 1 onion
- 1 red pepper
- 2 chicken breasts
- 1 spoonful honey
- 1 sachet of fajita spices
- 1 pack of wraps
- Half a cup of grated cheddar cheese

Chop the onion into strips. If you’ve never done it before, ask someone for help and be super careful with the knife, always cutting away from your fingers. Then chop your pepper in half and take out the seeds. Cut it into strips.

Cut the chicken breasts into cubes. Tip: using kitchen scissors is quicker than using a knife and much safer too. If you don’t eat meat, replace the chicken with tofu.

Heat a little oil in a frying pan and drop the onion in. Then add a big spoonful of honey and fry for a couple of minutes, until the onion is browned and nicely coated in honey. Add the peppers and fry for a few more minutes. Then add the chicken cubes. Keep turning everything until browned all over. Sprinkle on a pinch of salt and then add the sachet of spices. Mix everything together until the chicken is coated.

Turn off the heat and leave to cool for five minutes. Then grab a tortilla, put a few spoonfuls of the chicken mix in the middle of it, add the grated cheese, wrap it up and enjoy!
